At this point, I downgraded the MPC from 2.11.2 to 2.10.1, and everything works as expected. I'll report it as a (particularly nasty) bug to Akai. Sorry to waste anyone's time!
Not a waste of time, this kind of troubleshooting will hopefully help someone with similar issue!
